Where to go in Spain...?

I have about 5 or 6 days to get away for a quick break before i start my new job so am musing going to Spain, Greece or Italy.

 

Italy i may leave till next year, because i want two weeks away - Greece i'm ok on, and know where i'd go, but Spain is a mystery to me.

 

I want a nice sleepy resort with good hotels and beaches - i have no plans but to read and sleep - maybe a daytrip at some point but the most important thing is decent restaurants and a nice hotel.

 

Anyone care to advise?
