Administrator Techy Help!

In the past during my monitoring days we used to have to monitor users mailboxes individually. We would create a mailbox and turn on auditing somewhere (I think it was auditing ) that would receive any messages received or sent from a chosen persons mailbox. I know the theory, but can't remember who on earth to do it.

Any idea's?.
