It's a delicacy, everybody likes it unless they're a fully fledged freak (Noncey and Sion are possible candidates), but what is the best way of making it? Both sides toasted or just one side? The type of cheese you use, for flavour and best coverage? What type of Bread? Do you add any herbs or spices etc?

 

I personally go for toasted on one side with a mix of extra mature Cheddar and Stilton.
