Do you think this is actually a genuine phenomenon? I know that emotions are heightened at altitude for some reason (try watching a s*** film and not feel like its oscar winning material), and i have not investigated any scientific basis for that, but I fly so much, and i've probably only witnessed 3 instances of a genuinely unruly passenger in the whole time.

I think that stressed out drama queens who work for the airlines are usually responsible for the escalated situations that are then reported as "passenger air rage". A couple of cases in the past few weeks left me in little doubt. One in particular, in the airport today (paris orly, grrr)....I went from absolute calm to almost cracking, because i was being told to calm down and refused entry to the check in area, by someone who was obviously just overstretched by their job. I'd done nothing but say, then repeat, the name of my destination airport, to which she replied "bonjour?" 5 times, followed by "you can't talk to me like that, i'm not your sister or your girlfriend". (!!!) Had it been earlier in the morning, I never would've got on the plane at all.

Last week I had an american airlines flight be pulled back from taxi to gate and police come on board to remove a man and woman whos crime was to tell the steward their phones had flight mode and claim it was safe to leave them on; resulting delay 2 hours, while he marched up and down the aisle proclaiming how much he loved working on aircraft.

I don't know any other service where you would tolerate being treated like that.
