There's only a limited number of answers based on ANY two digit number combination. Those limited answers all have that same squiggly sign next to them in the list. All the answers that cannot be obtained from that initial sum have different squiggly figures.

But I've just done it about ten times, each time picking numbers as randomly as possible - how does it know which numbers I'm picking every single time?????

It changes the symbols by the numbers each time you do it.

 

There are still only ever about a few dozen possible answers to adding two digits and subtracting them from the original number, and they all have the same symbol next to them (e.g. 27, 36, etc.) (albeit a different symbol each time you do it) and that's the symbol that appears at the end.

The second digit you pick is irrelevant because you just subtract it. So you're just left with 10-1 or 20-2 or whatever else which is always a multiple of 9.
