Acrobat help please?

I'm not entirely sure its possible to do this but if anyone knows it would be you esteemed forumites!

 

Basically I have done a screen dump of an online training course we have (no we dont have the sort code unfortunately!) I have put it from word into pdf in an attempt to edit it as text. I have acrobat 7 and it enables you to select text and copy it to wherever you want which is fine, the only issue is that the text is selected and copied as an image so I am not able to edit it at all.

 

Does anyone have any ideas or know of any natty software that will let me copy and paste images as text?

 

And yes I have reinstalled java and am about to embark on percussive maintenance but always find that a bit drastic!
